VALENTINE SUNDAE CUPCAKES

These would be so cute to make 

for your special loved one!!!!



VALENTINE SUNDAE CUPCAKES 

Ingredients:
1 Box of any flavor cake mix
8 oz pkg of cream cheese (room temp)
1 lb of powdered sugar
1 stick of butter (softened)
1 teaspoon vanilla
Sprinkles
Maraschino cherries
Chocolate syrup or you can melt 1/2 of a bag of choc. chips
I also used Red Velvet Candy Melts-they are out for Valentines Day right now
Directions:
~Prepare you cake mix according to the directions on the box. Fill cupcake liners 3/4 full and bake according to the instructions on the box. Let cool completely after all cupcakes are baked. The kind I used was a pink Red Velvet cake mix that I found in the Valentines Day items at the store.
~While the cupcakes are cooling go ahead and prepare your cream cheese icing.
~In a bowl mix 8 oz pkg of cream cheese, your butter, 1 tsp of vanilla and add in 1/2 of your powdered sugar, using an electric mixer beat mixture until creamy and then add in your remaining powdered sugar and beat until creamy and smooth.
~Take a sandwich size ziplock baggie and spoon in your icing in the baggie and close ziplock top, cut a very small corner off the baggie at the bottom.
~ Place bag of icing in your hand and carefully pipe on your icing in a circular motion until covered so it appears you have vanilla ice cream on top.
~I drizzled chocolate syrup on top or you can place some choc. chips in a bowl and microwave them just long enough to melt them. I would only put them in 25 seconds at a time until melted so that they do not get overcooked & then drizzle immediately over the top of the icing.
~On some cupcakes I used Red Velvet Candy Melts. I placed approx. 30 candy melts in a bowl, microwaved for 25 seconds, stirred and microwaved for an additional 20 seconds until completely melted and then quickly drizzled over the top of the icing.
~Add your sprinkles on top while the melted topping is still warm so they'll stick, add your cherry on top of each cupcake and let cool for about 10-15 minutes if you use the candy melts so it has time to harden. Enjoy!!
