Sesame Ginger Legs



Sesame Ginger Legs

Ingredients:
12 chicken legs
Marinade:
2 tsp minced ginger
2 tsp minced garlic
4 Tbs sesame seeds
1 tsp ground black pepper
1/2 cup soya sauce
3 Tbs dark brown sugar (or honey)
4 Tbs extra virgin olive oil

Directions:
Marinate legs in marinade overnight in fridge. Preheat oven to 425F. Remove legs from marinade and place in greased baking pan. Bake for 40-45 minutes. Add marinade to pot, bring to a gentle boil, stir constantly and lower heat if needed so it does not burn. Cook marinade for 5-10 minutes or until thickened. Pour over the cooked legs or serve as a dipping sauce. Enjoy!

Grandmas Banana Pudding



Grandmas Banana Pudding 

is

Mouth watering delicious!


8 bananas
2 boxes instant banana pudding
1 box vanilla wafers
sm tub sour cream
1 tub cool whip you will use 1/2 the tub
Mix the pudding using 1-1/2 cups milk per box
once thick add 3 heaping tablespoons sour cream and 1/2 tub cool whip, fold it in. Mix it gently by hand. Next layer cookies, bananas and mixture then repeat til gone. Keep the left over cookies in the bag and crush them up to sprinkle on top.

★★★ SUPERBOWL Snack Idea ★★★

Cheesy Zucchini Bites

You'll need:
5 medium zucchini, cut into slices
3 Tbsp. Cream Cheese (use low fat if you want to cut back)
5 tablespoons grated Parmesan cheese
2 teaspoon dried basil
1/8 teaspoon pepper
1 pint cherry tomatoes, sliced in half

*An Optional Idea:
Replace 2 Tbsp. of Parmesan Cheese and 1 Tbsp. Cream Cheese with 3 ounces crumbled Blue Cheese (Feta Cheese could be used instead of Blue Cheese). You will still use the Parmesan Cheese for topping.

Directions:
-Cut zucchini into 3/4-inch slices. Using small spoon, scoop out the insides and discard, leaving the bottom intact.
-Place zucchini on an ungreased baking sheet.
-Combine the cream cheese, Parmesan cheese (set aside 2 Tbsp. for topping.), basil, and pepper. Top each with a tomato half (or two); sprinkle with the set-aside Parmesan cheese.
-Bake at 400°F until cheese is melted, 5-7 minutes. Serve warm.

Makes approximately 35 bites.

Veggie Ham & Egg Bake

Great Breakfast Idea!!!

Veggie Ham & Egg Bake 

You will Need:
4 Cups of Broccoli Flowerets, 
1 Cup of Small Grape Tomotoes, 
1/3 Cup of thinly sliced green onions
2 Cups of diced ham
1 Cup of Shredded Italian Cheese 
8 Eggs Well Beaten
Sea Salt dash
Pepper dash
Italian Seasoning dash
Sour Cream is optional if you want to top it with it
Pre heat your oven to 375 degrees and oil a 13x9 pan
Heat a small pan to boiling and blanch for 2 min. your broccoli, tomatoes and onion
Drain 
Dice your ham
Layer Broccoli, tomatoes, onion, ham cheese...
Then crack your eggs and beat them well adding all your seasonings
Pour eggs of mixture and stir to coat
Bake 35 to 45 min.
Enjoy ~

This is a great recipe that is a change up from traditional spaghetti!!


CHICKEN SPAGHETTI

serves 9
Ingredients:
2 cups cooked chicken
3 cups spaghetti, broken up
2 cups chicken broth, reserved from pot
2 cans cream of mushroom soup
2 cups sharp cheddar cheese grated
1 cup sharp cheddar cheese grated (reserved for later)
1/4 cup green pepper diced fine
1/2 cup diced onion fine
4 ozs. pimentos diced and drained
1 tsp seasoned salt (Lawry's)
1/5 tsp pepper flakes
pepper & salt
Instructions:
Cook cut up fryer in water, pick out the meat to make two cups.
Cook spaghetti in same chicken broth. Do not overcook. When spaghetti is cooked, combine with all of the remaining ingredients except for the additional cup sharp cheddar.
Put mixture in casserole pan and top with remaining sharp cheddar.

Bake immediately: 350 degrees for 45 minutes until bubbly.

Hint: To make sure cheese on the top does not get overcooked cover with foil for the last 15 minutes of cooking.

This recipe can be covered and frozen up to six months!
It can also be made ahead by 2 days just cover and refrigerate up to two days.

Loco Tango Martini .... This is a MUST HAVE drink!

This is a MUST HAVE drink! These were served by an awesome bartender at the Renaissance Concourse Atlanta Airport Hotel. If you are in that area, ask for Vanessa Roldan Roquemore! She gave permission to share her recipe! It was THE BOMB!
Loco Tango Martini
1 oz. Crown Royal
2 oz. Malibu Coconut Rum
1 oz Pineapple Juice 
Shake the above into a martini glass. Then layer with grenadine!
Careful! These are truly GULPABLE! SO delicious!

~Hello my name is Holly!
I have been on Skinny Fiber about 9 months now which is not normal for me I had tried other (diets) like 7 of them and never lasted, but with skinny fiber it is different, and I have went from 291lbs to 179lbs i have lost 112lbs and still going strong .
you should know I am in a wheelchair and I have been since I was 18 but I have not let that stop me and I have still lost a great amount of weight without exercise .
I have went from a size 26 to a size 12.. But not only have I lost weight but My health has made a huge change.. I No longer have Acid Reflux issues, my IBS is GONE..
Skinny Fiber has really Given me back my life without it I don’t know where I would be.. I just wished I would of started it sooner..

Chicken Avocado Salad ~ Low Carb, Gluten Free!! 


INGREDIENTS:
2 large chicken breasts grilled
1 large avocado
1 pouch ready made guacamole
1/2 cup red grapes cut in half
1 lime
1 tablespoon cilantro
salad greens and dressing of your liking
garnish with sliced almonds or sunflower seeds!
sea salt to taste

DIRECTIONS:
1)cube chicken toss into bowl
2)chop cilantro, add to bowl
3)juice lime into bowl
4)add guacamole, avocado, grapes and salt.
5)Place a large scoop of this to top your salad!

Chicken Crescent Rolls

This is a good quick meal to make during the week. 
You can even boil the chicken ahead of time and it will be ready in 30 minutes or less!

Chicken Crescent Rolls

2 cans of low fat refrigerator crescents
1 can of healthy low sodium cream of chicken soup(26oz)
1 cup fat free cheddar cheese
2 boneless skinless chicken breast

Boil the chicken breast then shred. Roll out each individual crescent, place about a Tbsp of shredded chicken in center and roll it up to make a crescent roll.

Bake at 350 degrees for about 5 minutes until just starting to turn golden. Pour Cream of chicken soup over the top of the chicken crescents and bake an additional 10 min. Top with cheddar cheese and bake for 10 more minutes.

VALENTINE SUNDAE CUPCAKES

These would be so cute to make 

for your special loved one!!!!



VALENTINE SUNDAE CUPCAKES 

Ingredients:
1 Box of any flavor cake mix
8 oz pkg of cream cheese (room temp)
1 lb of powdered sugar
1 stick of butter (softened)
1 teaspoon vanilla
Sprinkles
Maraschino cherries
Chocolate syrup or you can melt 1/2 of a bag of choc. chips
I also used Red Velvet Candy Melts-they are out for Valentines Day right now
Directions:
~Prepare you cake mix according to the directions on the box. Fill cupcake liners 3/4 full and bake according to the instructions on the box. Let cool completely after all cupcakes are baked. The kind I used was a pink Red Velvet cake mix that I found in the Valentines Day items at the store.
~While the cupcakes are cooling go ahead and prepare your cream cheese icing.
~In a bowl mix 8 oz pkg of cream cheese, your butter, 1 tsp of vanilla and add in 1/2 of your powdered sugar, using an electric mixer beat mixture until creamy and then add in your remaining powdered sugar and beat until creamy and smooth.
~Take a sandwich size ziplock baggie and spoon in your icing in the baggie and close ziplock top, cut a very small corner off the baggie at the bottom.
~ Place bag of icing in your hand and carefully pipe on your icing in a circular motion until covered so it appears you have vanilla ice cream on top.
~I drizzled chocolate syrup on top or you can place some choc. chips in a bowl and microwave them just long enough to melt them. I would only put them in 25 seconds at a time until melted so that they do not get overcooked & then drizzle immediately over the top of the icing.
~On some cupcakes I used Red Velvet Candy Melts. I placed approx. 30 candy melts in a bowl, microwaved for 25 seconds, stirred and microwaved for an additional 20 seconds until completely melted and then quickly drizzled over the top of the icing.
~Add your sprinkles on top while the melted topping is still warm so they'll stick, add your cherry on top of each cupcake and let cool for about 10-15 minutes if you use the candy melts so it has time to harden. Enjoy!!

HONEY LEMON HAND & ELBOW SCRUB 

Ingredients:
2 tsp. coconut or olive oil
1 Tbsp. honey
2 Tbsp. sea salt
2 tsp. lemon juice

Directions:
Combine in a bowl and mix well. Wet hands slightly. Take 1 Tbsp. and rub into hands, as if washing with soap. Rub mixture for a good 30 seconds to 1 minute. Rinse with warm water, no soap. Dry hands and feel the silkiness! Apply lotion if desired.

This can be done on elbows and heels that are dry and cracked as well.

Store in air tight container and keep in refrigerator. Ants will love this one!

My first 5K

While visiting the Fitness Ridge in Utah I did my first 5K.  

I am so proud to have placed 3rd but most proud about the

 fact that I ran for at least 2/3rds of the time. 

I never thought I could run without my shin splints hurting but 

I did and I am not even very sore today!! 

Beautiful mountains to view all the time. Yay!
