Until we can be outside, making real ones....


Grab the Kids and head off to the Kitchen for a fun treat!!! No need for a camp fire!

Until we can be outside, making real ones....

S'mores Cups

7 whole graham crackers (1 cup/250 mL finely crushed)
1/4 cup (50 mL) powdered sugar
6 tbsp (90 mL) butter, melted
4 bars (1.55 oz or 43 g each) milk chocolate candy, divided
12 large marshmallows or mini marshmallows.

Directions:
Preheat oven to 350°F (180°C). Place graham crackers into a large resealable plastic bag. Finely crush into crumbs .Combine graham cracker crumbs, powdered sugar and butter in small bowl. Using a spoon, place scant scoop of crumb mixture in each cup of Mini-Muffin Pan. Press crumbs to form shallow cups with tart shaper or Bake 4-5 minutes or until edges are bubbling. Meanwhile, break two of the candy bars into rectangles. Remove pan from oven; place one rectangle into each cup, I used chocolate chips....I was out of bars! LOL
2. Cut marshmallows in half crosswise using scissors dipped in cold water. Place one marshmallow half, cut-side down, into each cup. Return to oven 1-2 minutes or until marshmallows are just slightly softened. Remove from oven to cooling rack; cool 15 minutes. Carefully remove cups from pan. Cool completely.
3. Break remaining candy bars and place in bowl. Microwave on HIGH 1 minute-1 1/2 minutes or until melted and smooth, stirring every 20 seconds. Dip the top of each marshmallow in melted chocolate. Turn top-side up and let stand 40 minutes-1 hour or until set.
Makes 24 cups

Creamy Mozzarella Chicken Bake


Creamy Mozzarella Chicken Bake:

4-6 Boneless skinless Chicken Breasts
6-8 Slices Mozzarella Cheese 
1/2 c Mayonnaise
1/2 c Sour Cream
3/4 c Grated Parmesan Cheese
1/2 tsp salt ( to taste)
1/2 tsp pepper
1 tsp crushed garlic or ( 1 tsp garlic powder )

1. Heat over to 375 degrees.
2. Place Chicken in greased 9x13 pan.
3. Layer Mozzarella cheese on top of chicken breasts.
4. Mix together mayo, sr cream, 1/2 c of shredded Parmesan cheese and seasonings.
5. Spread on top of the Mozzarella cheese over Chicken breasts.
6. Sprinkle with 1/4 of shredded Parmesan Cheese.
7. Bake 1 hour.

Back from our 21 day cruise!

You might want to make a double batch ... Yes it's that good!


Loaded baked potato dip
 

16 oz. sour cream

16 slices bacon (12oz. Cooked and crumbled) 

8 oz. sharp cheddar cheese shredded (2cups)
 
1/3 cup scallions or chives chopped

Combine all ingredients in a bowl and chill for about 3 hours

 to allow all the flavors to blend. 

Garnish with a little extra

 cheese, chives and bacon. 

Serve with your favorite potato chips.
Note: You might want to make a double batch ...

BACON WRAPPED BBQ MEATBALLS


These are SO Delicious!!!!!

BACON WRAPPED BBQ MEATBALLS

Ingredients
2 lbs Ground Beef
10 - 14 Pieces of Thick Cut Bacon
2 Large eggs
1 1/2 Cups Italian Bread Crumbs
1/4 Cup Water
1 - 2 Tsp Garlic Powder (can use 1 to 2 fresh garlic cloves, minced)
1/2 Tsp Onion Powder (can use 1/4 cup finely chopped onions)
1 cup BBQ Sauce (I used Sweet Baby Ray's Hickory and Brown Sugar Sauce)

Directions
Step 1 Place ground beef, eggs, water, bread crumbs, garlic, and onion powder into a bowl and thoroughly mix the ingredients together.
Step 2 Roll into approximately 20 - 22 golf sized balls.
Step 3 Cut the bacon in half and wrap each meatball with a half slice of bacon.
Step 4 Place meatballs about an inch apart on a foil covered pan with the bacon seam side down. Bake at 350F degrees for 20 minutes in center rack. *You can also place the meatballs on a cookie rack in the pan. This will keep the meatballs out of the bacon grease.*
Step 5 At 20 minutes, take pan out and drain out bacon fat. Brush on BBQ sauce and place back into the oven for 10 minutes and brush on more BBQ sauce. Drain out pan again if needed. Brush on more BBQ sauce and place back into the oven for 5 minutes. *If you're not big on BBQ sauce, you can skip the third brushing of BBQ and serve BBQ sauce on the side*
Step 6 Drain any remaining bacon fat and serve.

Sesame Ginger Legs



Sesame Ginger Legs

Ingredients:
12 chicken legs
Marinade:
2 tsp minced ginger
2 tsp minced garlic
4 Tbs sesame seeds
1 tsp ground black pepper
1/2 cup soya sauce
3 Tbs dark brown sugar (or honey)
4 Tbs extra virgin olive oil

Directions:
Marinate legs in marinade overnight in fridge. Preheat oven to 425F. Remove legs from marinade and place in greased baking pan. Bake for 40-45 minutes. Add marinade to pot, bring to a gentle boil, stir constantly and lower heat if needed so it does not burn. Cook marinade for 5-10 minutes or until thickened. Pour over the cooked legs or serve as a dipping sauce. Enjoy!

Grandmas Banana Pudding



Grandmas Banana Pudding 

is

Mouth watering delicious!


8 bananas
2 boxes instant banana pudding
1 box vanilla wafers
sm tub sour cream
1 tub cool whip you will use 1/2 the tub
Mix the pudding using 1-1/2 cups milk per box
once thick add 3 heaping tablespoons sour cream and 1/2 tub cool whip, fold it in. Mix it gently by hand. Next layer cookies, bananas and mixture then repeat til gone. Keep the left over cookies in the bag and crush them up to sprinkle on top.
