Corn & Broccoli Casserole with Bacon


Corn & Broccoli Casserole with Bacon 

2/3 cup almond flour
1/2 cup cornmeal
3 Tablespoons granulated Swerve or Stevia
1 Tablespoon Baking Powder
pinch of sea salt
1/3 cup almond milk
1 can whole kernel corn, drained
1 can creamed corn
1 cup light sour cream
1/2 cup unsalted butter, melted
1 bag of frozen broccoli
1/2 package bacon, diced and cooked to crisp
1 cup grated cheese - whatever kind you like

Combine flour, cornmeal, sweetener, salt and baking powder in a small bowl.

Preheat oven to 350 degrees F. Grease a baking dish (I used a 13" x 9").

Melt the butter over low heat; dice up and cook bacon to crispy, drain grease and then allow to cool on paper towel. Lightly steam the broccoli, drain and then dump into the baking dish - spread it evenly out.

Open the cans of corn and pour into a medium sized bowl. Add into this the melted butter, sour cream and milk. Mix well. Now add in the dry ingredients and mix until no lumps. Pour over the broccoli.

Bake for about 55 minutes. Remove and sprinkle the bacon & cheese on top. Return to the oven and bake another 5 minutes or until cheese is all bubbly. ~ Enjoy!!

ITALIAN ROASTED POTATOES

Ingredients:
8 medium potatoes, washed and cubed
1/2 cup Parmesan cheese, shredded
1/4 cup breadcrumbs
1/4 cup olive oil
1 packet of Wish Bone Robusto Italian Dressing & Seasoning Mix
Instructions:
Preheat oven to 425 F degrees.
Wash and cut the potatoes in cubes. Fill a medium pot with water, add the potatoes to it and cook the potatoes for about 10 minutes just until they are a little tender. Do not cook through.
In a bowl, mix the Parmesan cheese, breadcrumbs and Italian seasoning.
Drain the potatoes and toss with olive oil. Sprinkle Italian mixture over the potatoes and toss, making sure each potato is coated with the mixture.
Bake for 30 minutes or until potatoes are golden.
Enjoy!

TWISTED CHICKEN POT PIE

Ingredients:
1 can (8oz) of refrigerated crescent dinner rolls
2 cups of cooked chicken (cubed)
1 16 oz bag of frozen mixed vegetables
1 can of cream of chicken soup- reduced fat/reduced sodium (10 3/4 size can)
1 can of cream of mushroom soup- reduced fat/reduced sodium (10 3/4 size can)

Directions:
Mix frozen vegetables, soups and cooked chicken in a large bowl.
Pour onto greased 13x9-inch glass baking dish.
Unroll dough into 2 long rectangles and press perforations to seal. Place rectangles over chicken mixture and pinch center edges to seal. Press outside edges of dough to edges of baking dish.
Bake at 350 F for 25-30 minutes or until top is golden brown.

ANT KILLER
Do you have an ant problem, inside or out? This will get rid of them...

What's so cool about this is, it took them 2 minutes to find it and 
5 minutes to fill up like the pic ! Wow!

1 empty water bottle
(Cut it down to about 2" tall)
5 Tbsp of baking soda
5 Tbsp of powdered sugar
3 Tbsp of water.

The very best way of eliminating ants is truly simple:
Take a small amount of powdered sugar (also called icing sugar) and mix it with an equal amount of baking soda (formally called sodium bicarbonate) and water.
Powdered sugar is essential. You cannot use the larger grains of sugar for this..
Mix the two powders together and then place small amounts against the walls or other areas where you would not normally walk but where you would normally see the ants.
The ants will be attracted to the sugar and will eat some of it and collect more to take home to feed others, so all of them will get their share.
The sugar and baking soda powders are similar in size and, once mixed together, the ants cannot separate the two items, so, as they eat the sugar, they will also ingest the baking soda, which they would otherwise never touch.

Paleo Crockpot Pork n Apples Tenderloin

 Recipe is for 1 Pork Tenderloin.

Ingredients
1 Pork Tenderloin
3 teaspoons cinnamon
1 teaspoon nutmeg
honey
5 Golden Delicious Apples

Directions
Slice tenderloin along the entire cut of meat diagonally. Into each slice insert a slice of apple. You will have extra apple slices.
Combine cinnamon and nutmeg. Sprinkle some in the bottom of your crockpot.
Put your tenderloin in the crockpot. Sprinkle the remaining cinnamon and nutmeg mixture over the tenderloin. Squeeze honey over the length of the tenderloin. Take your remaining apples and cover the meat in the crockpot. Cook on Low for 8 hours.

Breakfast Bake


Breakfast Bake
Ingredients
1/4 cup milk
5 eggs whisked
1 can refrigerated biscuits (I used the Pillsbury flakey kind)
6 green onions sliced
4 to 6 strips of bacon crumbled
1 cup cheddar cheese shredded
Directions
Combine whisked eggs and milk in a large bowl. Cut biscuits into quarters (using scissors) and stir into egg mixture. Let the biscuits soak in the egg mixture while you cook and crumble the bacon, slice the green onions, and shred the cheddar cheese. Add everything into the large bowl. Mix everything up and pour into a greased 9x13 baking dish. Bake at 350 degrees for 25 minutes. (make sure the eggs are no longer runny as each oven varies) Serve warm!

Deviled Chicken Thighs

A different way from "same old, same old" to prepare breaded chicken. Great flavor and crispy coating...baked, not fried!

INGREDIENTS
1⁄4 cup creamy mustard (Dijon or Dijonaisse)
1 tablespoon Worcestershire sauce
1⁄2 cup breadcrumbs
1⁄4 cup chopped fresh parsley
1⁄2 teaspoon salt
1⁄4 teaspoon fresh coarse ground black pepper
8 chicken thighs, skin removed (about 2 1/2 lbs.)

DIRECTIONS
Preheat oven to 475 degrees.
Lightly grease a baking sheet.
In a large bowl, mix mustard and Worcestershire sauce until blended.
In a pie plate or shallow container, combine bread crumbs, parsley, salt and pepper.
Toss chicken thighs in mustard mixture and then coat with crumb mixture.
Place on baking sheet and bake for 15 minutes; turn thighs over and bake an additional 15 minutes, or until juices run clear.

Carrie's Chili cornbread casserole. ....... 
quick and easy for a cold dreary day. Its sure to be a hit.
2 lbs lean ground beef or turkey
1 bell pepper
1 med onion
1 small can tomato sauce or 2 cups of juice
3 cans stewed tomatoes
3 cans kidney beans
2 cloves of garlic or 1 tsp preserved garlic
Chili powder
Salt and pepper
Your favorite corn bread mix ( i often use 3 boxes of jiffy)
I use a large roasting pan and mix everything in it.
Chop your pepper and onion. Add to your skillet with your ground meat and cook until done. Drain very well. Add it to your baking dish. Add your stewed tomatoes and small can of tomato sauce. Be sure to drain your kidney beans and then add them as well. Mix and then add your garlic and chili powder. (I use about 5 tablespoons) then salt, and pepper to taste. Put in the oven on 400º for 20 min. ( if the chili isn't hot before you add the cornbread the cornbread will not cook properly and will sink in the middle) while that is heating up prepare your cornbread as directed. I always double the recipe or use 3 boxes of jiffy cornbread mix. Once your chili is hot, pull out of the oven and poor your cornbread on top (its ok if the chili peaks out) drop the oven down to 350º bake until golden brown and a tooth pick comes out clean. About 40 min. 
Tip. ..... some ovens will Brown before the cornbread is done. You can turn the oven down to 200º or off and just leave it in the oven for 20 more min. The heat will be enough to continue the cooking without burning the top.

MAC & CHEESE PIZZA ★

A combination of Mac & Cheese and Pizza, I think YES! The kids will go nuts over this one!!!!

You Will Need:
2 boxes of Macaroni and Cheese
Pan full of Boiling water
1 lb of ground beef
1 lb of ground sausage
1 med onion chopped (if desired.. or can use minced onion to taste)
1 small green pepper chopped (if desired)
1 1/2 cup of shredded Mozzarella Cheese
1 1/2 cups of shredded Cheddar Cheese
1 Jar of pizza sauce (14 oz)
1/2 cup of pepperoni slices
Get your water boiling and then add your pasta.. cook till tender and drain
add the powdered cheese only.
Meanwhile cook your meat till done.. drain
In a greased 13 x 9 pan .. add the mac and cheese
Sprinkle with 1/2 cup of mozzarella and 1/2 cup of cheddar
Top with meat
Top meat with sauce and pepperoni
Then add remaining cheeses
Bake Uncovered at 350 degrees for 30 to 35 min.

Grab the Kids and head off to the Kitchen for a fun treat!!! No need for a camp fire!

S'mores Cups

7 whole graham crackers (1 cup/250 mL finely crushed)
1/4 cup (50 mL) powdered sugar
6 tbsp (90 mL) butter, melted
4 bars (1.55 oz or 43 g each) milk chocolate candy, divided
12 large marshmallows or mini marshmallows.

Directions:
Preheat oven to 350°F (180°C). Place graham crackers into a large resealable plastic bag. Finely crush into crumbs .Combine graham cracker crumbs, powdered sugar and butter in small bowl. Using a spoon, place scant scoop of crumb mixture in each cup of Mini-Muffin Pan. Press crumbs to form shallow cups with tart shaper or Bake 4-5 minutes or until edges are bubbling. Meanwhile, break two of the candy bars into rectangles. Remove pan from oven; place one rectangle into each cup, I used chocolate chips....I was out of bars! LOL
2. Cut marshmallows in half crosswise using scissors dipped in cold water. Place one marshmallow half, cut-side down, into each cup. Return to oven 1-2 minutes or until marshmallows are just slightly softened. Remove from oven to cooling rack; cool 15 minutes. Carefully remove cups from pan. Cool completely.
3. Break remaining candy bars and place in bowl. Microwave on HIGH 1 minute-1 1/2 minutes or until melted and smooth, stirring every 20 seconds. Dip the top of each marshmallow in melted chocolate. Turn top-side up and let stand 40 minutes-1 hour or until set.
Makes 24 cups

Creamy Mozzarella Chicken Bake


Creamy Mozzarella Chicken Bake:

4-6 Boneless skinless Chicken Breasts
6-8 Slices Mozzarella Cheese 
1/2 c Mayonnaise
1/2 c Sour Cream
3/4 c Grated Parmesan Cheese
1/2 tsp salt ( to taste)
1/2 tsp pepper
1 tsp crushed garlic or ( 1 tsp garlic powder )

1. Heat over to 375 degrees.
2. Place Chicken in greased 9x13 pan.
3. Layer Mozzarella cheese on top of chicken breasts.
4. Mix together mayo, sr cream, 1/2 c of shredded Parmesan cheese and seasonings.
5. Spread on top of the Mozzarella cheese over Chicken breasts.
6. Sprinkle with 1/4 of shredded Parmesan Cheese.
7. Bake 1 hour.

Super Easy Crock Pot Rotisserie Chicken Because of the foil balls, the fat drains off the chicken as it cooks. Healthy indeed!! I add lemo...
