Home made vegetable quiche
Shortcrust pastry:

1 cup Flour
1 cup S.R.Flour
pinch of salt
1/2 cup butter
1/2 cup water

Method:

Sift the flours, add salt, rub in butter lightly with your finger tips then pour the water in the center slowly, making a stiff dough.Roll as desired.

Ingredients for my Quiche:

I made a large one used 8 eggs, milk, garlic, red onion, chives, bacon, grated cheese and carrot, chopped up mushrooms and capsicum, sage, parsley, spinach and silver beet and slice tomatoes.
I saute the onions, garlic, capsicum, mushrooms bacon, in a little butter or olive oil first. then add the eggs, milk, herbs, cheese, carrots spinach, silver beet ect in a bowl then add the rest of the cooked ingredients.. pour into the dish of yummy shortcrust pastry, you don't have to blind bake it works out good. Then decorate with sliced tomatoes.
Delish!!!
