Southern Fried Cornbread

This one might not fall into the "healthy" category for weight loss but then again, not all of my friends are seeking to lose weight. Plus sometimes, even if we are, a little splurge is like a mini vacation. These are so yummy and would be a nice compliment to those Collards on New Year's Day!


Southern Fried Cornbread

2/3 cup cornmeal
1/3 cup self rising flour
1/3 cup low fat buttermilk
1 large egg
oil for frying (I used about 3 tbsps coconut oil, but you can use whatever you like)

Combine first 4 ingredients together in a bowl, mixing well. Mixture should be very moist but not soupy. Heat oil in skillet and drop by spoonfuls into oil. Cook til brown on one side and flip (it cooks kind of like a pancake) to brown on the other side. Place on plate with paper towels and blot any excess oil.

Loaded Potato and Buffalo Chicken Casserole

Our delicious dinner we made tonight! 

Oh so good, you just gotta taste it!!

Great for Parties or a Potluck Dinner. 

Loaded Potato and Buffalo Chicken Casserole
2 pounds boneless chicken breasts, cubed (1")
8 medium potatoes, cut in 1/2" cubes
1/2 cup olive oil
1&1/2 tsp salt
1 Tbsp. black pepper
1 Tbsp. paprika
2 Tbsp. garlic powder
6 Tbsp. hot sauce
Topping:
3 cups fiesta blend cheese
1 cup crumbled bacon
1 cup diced green onion
Preheat oven to 500 degrees. Spray a 9X13" baking dish with cooking spray. In a large bowl mix together the olive oil, salt, pepper, paprika, garlic powder and hot sauce. Add the cubed potatoes and stir to coat. Carefully scoop the potatoes into the prepared baking dish, leaving behind as much of the olive oil/hot sauce mixture as possible. Bake the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and crispy and browned on the outside. While the potatoes are cooking, add the cubed chicken to the bowl with the left over olive oil/hot sauce mixture and stir to coat. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400 degrees. Top the cooked potatoes with the raw marinated chicken. In a bowl ix together the cheese, bacon and green onion and top the raw chicken with the cheese mixture. Return the casserole to the oven and bake for 15-20 minutes or until chicken is cooked through and the topping is bubbly delicious.
Serve with extra hot sauce and/or ranch dressing.

"Hey everyone. I wanted to post an update. 9 months with Skinny Fiber. This is the longest I have ever stuck with a "plan". I am so pumped for myself! To date I have gotten rid of 56 lbs, 63.5 inches. Starting out i was 271, I am now 216. Never in my life would I have thought that I would share my weight on the internet! I absolutely LOVE this story and wanted to share it with y'all.  

A CHRISTMAS STORY TO REMEMBER  
It was Christmas Eve 1881. I was fifteen years old and feeling like the world had caved in on me because there just hadn't been enough money to buy me the rifle that I'd wanted for Christmas.
We did the chores early that night for some reason. I just figured Pa wanted a little extra time so we could read in the Bible. After supper was over I took my boots off and stretched out in front of the fireplace and waited for Pa to get down the old Bible.
I was still feeling sorry for myself and, to be honest, I wasn't in much of a mood to read Scriptures. But Pa didn't get the Bible instead he bundled up again and went outside. I couldn't figure it out because we had already done all the chores. I didn't worry about it long though I was too busy wallowing in self-pity.
Soon Pa came back in. It was a cold clear night out and there was ice in his beard. "Come on, Matt," he said. "Bundle up good, it's cold out tonight." I was really upset then. Not only wasn't I getting the rifle for Christmas, now Pa was dragging me out in the cold, and for no earthly reason that I could see. We'd already done all the chores, and I couldn't think of anything else that needed doing, especially not on a night like this. But I knew Pa was not very patient at one dragging one's feet when he'd told them to do something, so I got up and put my boots back on and got my cap, coat, and mittens. Ma gave me a mysterious smile as I opened the door to leave the house. Something was up, but I didn't know what..
Outside, I became even more dismayed. There in front of the house was the work team, already hitched to the big sled. Whatever it was we were going to do wasn't going to be a short, quick, little job. I could tell. We never hitched up this sled unless we were going to haul a big load. Pa was already up on the seat, reins in hand. I reluctantly climbed up beside him. The cold was already biting at me. I wasn't happy. When I was on, Pa pulled the sled around the house and stopped in front of the woodshed. He got off and I followed.
"I think we'll put on the high sideboards," he said. "Here, help me." The high sideboards! It had been a bigger job than I wanted to do with just the low sideboards on, but whatever it was we were going to do would be a lot bigger with the high side boards on.
After we had exchanged the sideboards, Pa went into the woodshed and came out with an armload of wood - the wood I'd spent all summer hauling down from the mountain, and then all Fall sawing into blocks and splitting. What was he doing? Finally I said something. "Pa," I asked, "what are you doing?" You been by the Widow Jensen's lately?" he asked. The Widow Jensen lived about two miles down the road. Her husband had died a year or so before and left her with three children, the oldest being eight. Sure, I'd been by, but so what?
Yeah," I said, "Why?"
"I rode by just today," Pa said. "Little Jakey was out digging around in the woodpile trying to find a few chips. They're out of wood, Matt." That was all he said and then he turned and went back into the woodshed for another armload of wood. I followed him. We loaded the sled so high that I began to wonder if the horses would be able to pull it. Finally, Pa called a halt to our loading then we went to the smoke house and Pa took down a big ham and a side of bacon. He handed them to me and told me to put them in the sled and wait. When he returned he was carrying a sack of flour over his right shoulder and a smaller sack of something in his left hand.
"What's in the little sack?" I asked. Shoes, they're out of shoes. Little Jakey just had gunny sacks wrapped around his feet when he was out in the woodpile this morning. I got the children a little candy too. It just wouldn't be Christmas without a little candy."
We rode the two miles to Widow Jensen's pretty much in silence. I tried to think through what Pa was doing. We didn't have much by worldly standards. Of course, we did have a big woodpile, though most of what was left now was still in the form of logs that I would have to saw into blocks and split before we could use it. We also had meat and flour, so we could spare that, but I knew we didn't have any money, so why was Pa buying them shoes and candy? Really, why was he doing any of this? Widow Jensen had closer neighbors than us; it shouldn't have been our concern.
We came in from the blind side of the Jensen house and unloaded the wood as quietly as possible then we took the meat and flour and shoes to the door. We knocked. The door opened a crack and a timid voice said, "Who is it?" "Lucas Miles, Ma'am, and my son, Matt, could we come in for a bit?"
Widow Jensen opened the door and let us in. She had a blanket wrapped around her shoulders. The children were wrapped in another and were sitting in front of the fireplace by a very small fire that hardly gave off any heat at all. Widow Jensen fumbled with a match and finally lit the lamp.
"We brought you a few things, Ma'am," Pa said and set down the sack of flour. I put the meat on the table. Then Pa handed her the sack that had the shoes in it. She opened it hesitantly and took the shoes out one pair at a time. There was a pair for her and one for each of the children - sturdy shoes, the best, shoes that would last. I watched her carefully. She bit her lower lip to keep it from trembling and then tears filled her eyes and started running down her cheeks. She looked up at Pa like she wanted to say something, but it wouldn't come out.
"We brought a load of wood too, Ma'am," Pa said. He turned to me and said, "Matt, go bring in enough to last awhile. Let's get that fire up to size and heat this place up." I wasn't the same person when I went back out to bring in the wood. I had a big lump in my throat and as much as I hate to admit it, there were tears in my eyes too. In my mind I kept seeing those three kids huddled around the fireplace and their mother standing there with tears running down her cheeks with so much gratitude in her heart that she couldn't speak.
My heart swelled within me and a joy that I'd never known before filled my soul. I had given at Christmas many times before, but never when it had made so much difference. I could see we were literally saving the lives of these people.
I soon had the fire blazing and everyone's spirits soared. The kids started giggling when Pa handed them each a piece of candy and Widow Jensen looked on with a smile that probably hadn't crossed her face for a long time. She finally turned to us. "God bless you," she said. "I know the Lord has sent you. The children and I have been praying that he would send one of his angels to spare us."
In spite of myself, the lump returned to my throat and the tears welled up in my eyes again. I'd never thought of Pa in those exact terms before, but after Widow Jensen mentioned it I could see that it was probably true. I was sure that a better man than Pa had never walked the earth. I started remembering all the times he had gone out of his way for Ma and me, and many others. The list seemed endless as I thought on it.
Pa insisted that everyone try on the shoes before we left. I was amazed when they all fit and I wondered how he had known what sizes to get. Then I guessed that if he was on an errand for the Lord that the Lord would make sure he got the right sizes.
Tears were running down Widow Jensen's face again when we stood up to leave. Pa took each of the kids in his big arms and gave them a hug. They clung to him and didn't want us to go. I could see that they missed their Pa and I was glad that I still had mine.
At the door Pa turned to Widow Jensen and said, "The Mrs. wanted me to invite you and the children over for Christmas dinner tomorrow. The turkey will be more than the three of us can eat, and a man can get cantankerous if he has to eat turkey for too many meals. We'll be by to get you about eleven. It'll be nice to have some little ones around again. Matt, here, hasn't been little for quite a spell." I was the youngest. My two brothers and two sisters had all married and had moved away.
Widow Jensen nodded and said, "Thank you, Brother Miles. I don't have to say, May the Lord bless you, I know for certain that He will."
Out on the sled I felt a warmth that came from deep within and I didn't even notice the cold. When we had gone a ways, Pa turned to me and said, "Matt, I want you to know something. Your ma and me have been tucking a little money away here and there all year so we could buy that rifle for you, but we didn't have quite enough.
Then yesterday a man who owed me a little money from years back came by to make things square. Your ma and me were real excited, thinking that now we could get you that rifle, and I started into town this morning to do just that, but on the way I saw little Jakey out scratching in the woodpile with his feet wrapped in those gunny sacks and I knew what I had to do. Son, I spent the money for shoes and a little candy for those children. I hope you understand."
I understood, and my eyes became wet with tears again. I understood very well, and I was so glad Pa had done it. Now the rifle seemed very low on my list of priorities. Pa had given me a lot more. He had given me the look on Widow Jensen's face and the radiant smiles of her three children. For the rest of my life, Whenever I saw any of the Jensens, or split a block of wood, I remembered, and remembering brought back that same joy I felt riding home beside Pa that night. Pa had given me much more than a rifle that night, he had given me the best Christmas of my life.

With a wide range of health benefits, cherries -- and more specifically, tart cherries -- are an oft-overlooked superfoods. But whether it's insomnia, joint pain or belly fat you're dealing with, cherries may be just what the doctor ordered. 
Here's why.
Cherries battle belly fat. Researchers found that tart cherries have significant weight management benefits for animals, including reduced belly fat. In the study, rats that received whole tart cherry powder mixed into a high-fat diet didn't gain as much weight or build up as much body fat as rats that didn't receive cherries. Their blood also showed much lower levels of certain inflammation markers linked to heart disease and diabetes. And, in addition, they had significantly lower blood levels of cholesterol and triglycerides than their cherry-deprived counterparts.
Cherries cut your chance of getting gout. If you have ever felt the agonizing pain of a gout attack (swollen toes and all) it quickly becomes something you don't want to experience again. For gout sufferers, tart cherries may be another solution to add to their anti-gout arsenal. A 2012 study published in Arthritis & Rheumatism found that patients with gout who consumed cherries over a two-day period (yes, just two days!) showed a 35% lower risk of gout attacks compared to their fruit wary counterparts. In addition, the risk of gout flares was 75 per cent lower when cherry intake was combined with the uric-acid reducing drug, allopurinol. And if you are wondering if you will have to start your own cherry farm, the participants consumed just ½ cup (or 10-12 cherries) up to three times per day.
Cherries combat post-workout soreness. Find yourself having trouble walking down the stairs (or even sitting down) after a hard workout? If you're looking for a healthy way to fight post-exercise soreness, cherries fit the bill. Studies suggest a cup and a half of tart cherries or one cup of tart cherry juice can significantly reduce muscle inflammation and soreness (remember that a good workout actually causes muscle damage, resulting in inflammation).
In one study a group of marathon runners drank tart cherry juice or a placebo drink twice daily for seven days prior to their race. The cherry juice group reported significantly less post-race muscle pain. Remember to have it immediately post workout (i.e. with your whey protein) when your muscles are primed to absorb excess insulin in the bloodstream.
Cherries provide natural osteoarthritis relief. If you can't shake the pain and discomfort of swollen joints and you are frustrated with the side effects of the standard prescription of ice and NSAIDs you can choose to stock up on tart cherries either in juice, pill or fruit form.
In a study of twenty women ages 40 to 70 with inflammatory osteoarthritis, researchers found that drinking tart cherry juice twice daily for three weeks led to significant reductions in important inflammation markers - especially for patients who had the highest inflammation levels at the start of the study, It certainly beats the side effects of many pain medications.
Cherries reduce stroke risk. Researchers from the University of Michigan Health System found that tart cherries provide cardiovascular benefits equal to some medications, and can improve the result even when taken with prescriptions. They believe that anthocyanins -- the pigments that give the tart cherries its red color -- may activate something called PPAR in bodily tissues, which in turn regulate fat and glucose levels and therby reduce risk factors for high cholesterol, blood pressure and diabetes. Not a bad gig for such a small fruit!
Cherries help you get some sleep. Perhaps the most common complaint that I hear from new patients has to do with sleep. Whether it stems from unbalanced hormones, excess stress, a busy mind or unhealthy habits, a large portion of us are left tossing and turning each night in desperation--but cherry juice could help. In one study participants drank 30ml of cherry juice 30 minutes after waking and 30 minutes before their evening meal, thereby boosting their exogenous melatonin intake by 85mcg/day.
The results? There were significant increases in time in bed, total sleep time, and sleep efficiency total with cherry juice supplementation. So reach for some cherry juice instead of the sleeping pills! Roasted Pork & Herb Gravy
Serves 12

A delicious pork loin that is full of flavor, 
topped with a gravy that elevates the dish to a new level

Prep Time - 20 min

Cook Time - 1 hr 30 min

Total Time - 7 hr

Ingredients

3-4 lb pork loin (or 2 pork tenderloins)
1/4 cup extra virgin olive oil
2 tbsp. Dijon mustard
4 garlic cloves, minced
3 lemons, zested & juiced
2 rosemary sprigs, with leaves pulled off
1 tsp fresh tarragon, chopped
4 basil leaves, torn into pieces
1 tbsp. salt
1 tbsp. pepper
1 tbsp. butter
1 small onion, chopped
1/2 cup dry white wine
1 cup chicken stock, divided
1 sprig rosemary, leaves pulled off
2 basil leaves, torn into pieces
1/4 cup half & half
**Optional: 1 tbsp. cornstarch & 1 tbsp. water to thicken gravy

To marinate the pork

1.Place pork loin in a large zip closure bag
2.In a small bowl combine olive oil, mustard, garlic, lemon zest & juice, rosemary, tarragon & basil
3.Pour marinade over pork in bag and massage to make sure pork is coated
4.Close bag and let marinate for at least 6 hours, or overnight

To cook pork

1.Preheat oven to 350
2.Remove pork from bag and sprinkle with salt & pepper on both sides
3.In a large oven safe skillet melt butter over medium-high heat
4.Add in chopped onion and let cook until starting to brown, stirring often
5.Add in pork and let brown on all sides, flipping as needed
6.Remove pork once browned to a plate, set aside
7.Add in white wine and scrape up all the browned bits on the bottom of the pan
8.Let wine cook until alcohol smell is gone, about 3-4 minutes
9.Add in 1/4 cup of chicken stock
10.Place pork back into skillet and place into preheated oven
11.Cook for 1 - 1 1/2 hours, flipping pork loin every 30 minutes, or until internal temperature reaches 150 degrees (cooking time will be less for 2 tenderloins)
12.When done remove to a plate, cover with foil and set aside

To make gravy

1.Add in remaining chicken stock, rosemary & basil to skillet with pan juices from pork and let cook down for a few minutes over medium heat
2.Remove from heat and stir in half & half, return to heat and let it continue to cook down for an additional 5 minutes to thicken
3.If it is not thick enough mix cornstarch and water in a small bowl and pour into gravy, stirring constantly until it thickens
4.Taste and adjust any seasonings as needed (I didn't need too)
5.Carve pork thinly and pour gravy over pork to serve
6.ENJOY!!

Great recipe for sore throats and chest colds

WINTER SORE THROAT "TEA" 

Make sure you have some of this ready... great recipe for sore throats and chest colds

Makes about 2 cups
2 lemons thoroughly cleaned and sliced
2 piece of ginger about inch thick sliced into thin pieces
Honey (about 1 cup-maybe more) 

In a 12-16 oz. jar combine lemon slices and sliced ginger. Pour honey (organic is best) over it slowly. This may take a little time to let the honey sink down and around the lemon and ginger slices. Make sure when the honey has filled in all the voids, there is enough to cover the top of the lemon slices. Close jar and put it in the fridge, it will form into a "jelly". To serve: Spoon 1 tsp. of the jelly into mug and pour boiling water over it. 
Can be Stored in fridge 2-3 months.

Lisa shares her journey--First off I need to let you know I was very skeptical of trying Skinny Fiber as I have tried a few "other " products before and just ended up wasting my hard earned money!. I have Juvinile rheumatoid arthritis. I was diagnosed with this at 18 months of age! I was just a baby so I grew up not being able to participate in a lot of different sports. ★ Buffalo Chicken Casserole ★

I made this up today and have to say it is a Winner!!

This kickin’ casserole has all the classic buffalo chicken flavor you'll love. 
Definitely not your normal casserole. 
It delivers big, bold taste and is on the table in less than an hour!



★ Buffalo Chicken Casserole ★

Serves 6
Servings: about 1 cup each
Bake: 25 min.
What You'll Need
3 cups shredded cooked chicken breast
1/3 cup Franks Original RedHot Sauce
1/3 cup Ranch Salad Dressing
6 ounces egg noodles (or pasta of your choice), cooked and drained
1 3/4 cup Alfredo Sauce (make your own or use 14 oz jar of pre made)
1/4 cup shredded Parmesan cheese
1/4 cup crumbled blue cheese
6 slices of ultra thin provolone cheese (for top)
1/4 cup shredded cheddar cheese (for top)
How to Make It
Heat the oven to 350°F. Lightly grease an 11x8x2-inch baking dish.
Stir the chicken and Franks hot sauce in a large bowl. Stir in the noodles, Alfredo Sauce, Ranch dressing and 1/4 cup parmesan cheese and 1/4 cup blue cheese. 
Spoon the chicken mixture into glass baking dish. Cover the top with the 6 slices of provolone cheese and sprinkle with the cheddar cheese.
Bake for 25 minutes or until the chicken mixture is hot and bubbling and the cheese is melted. Serve with more Franks HotSauce if you like it real spicy!

Chocolate Peppermint Schnapps Cake

Chocolate Peppermint Schnapps Cake

2/3 cup butter, softened
1-2/3 cups sugar
3 eggs
2 cups all-purpose flour
2/3 cup baking cocoa
1-1/4 teaspoons baking soda
1 teaspoon salt
1-1/3 cups milk
1/2 c Crushed Candy Canes
1/8 c Peppermint Schnapps

In a bowl, cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, cocoa, baking soda and salt; add to creamed mixture alternately with milk, beating until smooth after each addition, add crushed candy cane. Pour batter into a greased and floured 13-in. x 9-in. pan. Bake at 350° for 35-40 minutes or until cake tests done. Cool on a wire rack. Drizzle with Peppermint Schnapps while hot.
Easy Chocolate Buttercream Frosting: 1/2 cup butter, softened, 1-1/2 teaspoons vanilla extract, 4 cups confectioners' sugar, 1/2 cup baking cocoa, 1 tbsp Peppermint Schnapps, and 6-7 tablespoons milk. In a large bowl, beat butter until creamy. Beat in the confectioners' sugar, vanilla and enough milk to achieve desired consistency. Cover with crushed candy cane.
