Judge less and love more

Judge less and love more. 
We should be more accepting of everyones personal journey
In life, we are all on a different path
Ours is not better than anothers, 
it is just OURS! 
Some days are easy and some are not. I find that when I go with the flow instead of fighting it, the day turns out better and therefore life is better. 
Accept what is. We must accept the challenges in front of us and Live life to the fullest. Stand strong but remember to enjoy the beauty around. All things on this Earth are temporary anyway! Enjoy those you have with you now. 
Live today, don't fret about yesterday or tomorrow. Try not to be so serious all the time. 
As that old saying goes: Live, Laugh, Love!

German Chocolate PIE Oh my!


German Chocolate PIE !!!! 
I've gained 10 pounds in 2 seconds just LOOKING at it!!! This is an awesome rich and decadent pie Thanks Karen  Check out the picture on the right; you can see how it layers.
A gooey, delightful over the top PIE!


Karen's German Chocolate Pie
Preheat oven to 375 degrees.
1 pkg (4 oz) Bakers German Chocolate
1/4 cup butter (Do not use margarine)
1 2/3 cup PET evaporated milk
1 1/2 cup sugar
3 tbs cornstarch
1/2 tsp salt
2 eggs
1 tsp vanilla
1. Melt your chocolate with butter in the microwave.
2. Add milk and set aside.
3. Mix the sugar, cornstarch, and salt together.
4. Add the chocolate mixture and mix.
5. Add eggs and mix.
6. Add vanilla.
7. Pour into unbaked pie shell.
8. Bake until puffed and brown, approximately 45 min
9. Make sure your pie sets up.
Topping:
1 stick butter (Do not use margarine)
3/4 cup sugar
3/4 cup PET evaporated milk
3 egg yolks
1 cup pecans
1/4 cup coconut
1. Melt butter in microwave and pour into a heavy pan.
2. Mix sugar milk egg yolks together and add to butter.
3. Cook over medium heat until thick and bubbly. (Continue to stir.)
4. Add 1 cup of pecans
5. 1/4 cup of coconut
6. Spread over pie

Liana's story...I have been heavy all my life. as a child in grade school i was about 30 pounds overweight. In 2010 i was hospitalised with west nile and while in the hospital my Dr decided I needed drastic weight loss. i became his guinea pig and for a month i lived on 500 to 600 calories a day!! I lost almost 169 pounds in one month !!. the result was rapid weight loss and i now have a weak heart ( thank you dr jeckyl ) within 2 yrs i balooned back up to almost 560 pounds
i could not walk across my living room without gasping for breath and shopping was no linger an option. i became a prisoner in my own home. i had to sit to cook, do dishes and housework was impossible for me to do. i was killing myself and i had a young child to care for. i decided i needed to do something fast. i started praying and talking about my weight. i changed my eating habbits and started to lose weight.

Waking up this morning and it is cold.
I like a cool brisk morning but only if the sun is shining.
It feels like Autumn and my coffee is extra delicious :)

I am having a yummy pumpkin bar that I got from Trader Joes this week.  It is good but I really like homemade better.  Gotta find me a good recipe.  Pumpkin everything, I am a crazy pumpkin lover!!

Here is a recipe I got from my friend that I am looking forward to making this fall:



Pumpkin Cream Cheese Cupcakes

(Low Carb, no Sugar Added)

Perfect treats for Fall! 
Amazing with a nice hot coffee!!!

Ingredients
Pumpkin Muffins:
3/4 cup pumpkin puree
3 cups almond flour
1/3 cup vanilla whey protein powder
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 ½ tsp cinnamon
1/2 tsp pumpkin spice
1/4 cup butter, melted
1/2 cup Truvia Sweetener or desired sweetener to taste
3 eggs
2 tsp vanilla extract
1/4 cup unsweetened almond milk
Sweetened Pumpkin Seeds Topping:
1/4 cup roasted pumpkin seeds
1 tbsp melted butter
1/4 cup pumpkin seeds
1 tbsp Truvia Sweetener or desired sweetener to taste
1/2 tsp cinnamon
Cream Cheese Filling:
1 1/2 pkgs (12 oz) cream cheese, softened
1/2 cup Truvia Sweetener or desired sweetener to taste
2 eggs
2 tsp vanilla
1/8 tsp salt

Instructions
For sweetened Pumpkin Seeds Topping, Place pumpkin seeds, butter, 
truvia and cinnamon in a bowl and mix well, set aside.
For the cream cheese filling, beat cream cheese with eggs,
sweetener, salt and vanilla extract until smooth. Set aside.
For the muffins, preheat oven to 325F and line 24 muffin tins with paper liners.
In a bowl, whisk together the almond flour, protein powder,
 baking powder, baking soda, salt and spices.
Beat in butter and sweetener until well combined.
 Add pumpkin puree, eggs,almond milk and vanilla extract.
Drop a spoonful of batter into the bottom of prepared muffin tins and 
make a well in the center. Drop a tablespoon of cream cheese filling into the well, 
then top with more batter to fill muffin tins about 3/4 full.
Sprinkle each muffin with some pumpkin seeds.
Bake 23 to 25 minutes, or until tops are set and edges are just browned. 
Let cool in pan 10 minutes before transferring to a wire rack to cool completely.
