Super Easy Crock Pot Rotisserie Chicken

Because of the foil balls, the fat drains off the chicken as it cooks. Healthy indeed!! I add lemon pepper to it for extra flavor feel free to add spices of your choice. 

INGREDIENTS
1 whole roasting chicken
olive oil flavored cooking spray
seasoning salt, to taste

DIRECTIONS
Make 4 or 5 loose balls of aluminum foil and place in bottom of crock pot.
Clean chicken inside and out. Spray with olive oil spray.
Sprinkle generously inside and out with seasoned salt.
Put chicken back-side down in crock pot (on top of foil balls).
Cook on high 4-6 hours.

Spaghetti Squash Lasagna

Spaghetti Squash Lasagna

What you need is
2 spaghetti squash
1.5 lbs ground beef
1 can crushed tomatoes
3 cloves garlic crushed ( we LOVE garlic can you less)
1 onion chopped
2 Italian sausages cut into pieces
1 small container of Ricotta Cheese
1 small container of Cottage Cheese
1 egg
Basil
fresh spinach
Mozzarella cheese
Parsley
Pepper

Pre heat oven to 350.
Cut squash in half lengthwise and clean out seeds. Place in baking dish cut side down with an inch of water, cover with tin foil and bake for about 40 min or till done

While Squash is cooking, in a frying pan add your hamburger and sausage and onions and brown add garlic and Italian spices, once meat is cooked, add tomatoes and simmer for about 10 to 15 min.
In a small bowl add ricotta cheese, cottage cheese egg 2 tsp basil, and pepper, mix well set aside.

One squash is done, place them on a cookie sheet lined with tin foil, I am thrifty so I used the tin fold that i cover them with. Now you going to fill them 
Divide your cheese mixture between your squash, then add your spinach, then your sauce, top with mozzarella cheese sprinkle with parsley and basil. Bake in the oven for about 25 min.
Cut each squash in half, Plate and Enjoy

Nothing spells relaxation better than BEER on the BEACH

Sooooo!!!
After a wonderful, 
exhilarating 
morning snorkeling at Eden Rock, 

we hunted out a place for lunch and a good beer. 

 
We landed at Paradise Restaurant right beside the ocean with a wonderful view of the our Carnival Breeze Ship!

I love Grand Cayman and can see Roby and I spending weeks or maybe even months here in the future!! 
If you ever get a chance to go to Georgetown be sure to spend some time snorkeling at Eden Rock.

Upside Down Pepperoni Pizza Casserole



Upside Down Pepperoni Pizza Casserole

1 -1 1⁄2 lb ground beef

1 medium onion, diced
2 garlic cloves, minced
1 (8 ounce) package mushrooms, sliced
1 (4 ounce) can black olives, drained
1 (15 ounce) can pizza sauce
5 ounces turkey pepperoni, slices
3 -4 ounces low fat mozzarella, shredded
1 (16 1/3 ounce) packagegrands homestyle refrigerated reduced-fat buttermilk biscuits, separated and cut into fourths


DIRECTIONS
Preheat oven to 400 degrees and prepare baking dish (I use a 1.75qt oval baker).
Over medium heat, combine the ground beef, onion and garlic in a large skillet until beef is browned.
Add the mushrooms, olives, pepperoni and tomato sauce and heat through.
Pour mixture into prepared baking dish.
Sprinkle with mozzarella cheese.
Top randomly with biscuit pieces.
Bake 15-18 minutes until biscuits are browned and casserole is bubbly.

SQUASH CASSEROLE


My friend Peggy has been making this for 25 years now and it is still highly requested!! Give it a try with some fresh squash!

SQUASH CASSEROLE

6 medium sized yellow squash (frozen squash works well also)
1 medium onion
3 med. Eggs beaten well
1 cup velveeta cheese (or get the 1lb box – I use the Mexican)
1 can cream of chicken soup (undiluted)
1 stick melted butter (8 tablespoon Omega Smart Balance)
1 sleeve ritz crackers crumbled
Substitutions: crackers and soup with low sodium and Omega Smart balance for the butter

Directions:
Wash and slice squash, slice onion and add both to boiler with 2 cups of water. Cook until squash is tender. Drain all the water and combine with melted cheese and cream of chicken soup. Blend in gently the eggs and pour in casserole dish. Sprinkle cracker crumbs over casserole and then drizzle melted butter over entire dish. Bake at 375 for 30 to 40 minutes and bubble and golden brown.

Great gift to make for Mother's Day!! 
Oh my goodness AMAZING!!
Plus it will make your house smell delicious!!!


Crock Pot Maple Nuts

2 tsp coconut oil 
1 cup of mixed nuts
1/2 tsp sea salt
2 tbsp maple syrup
1/2 tsp vanilla extract

Turn crock pot on high. Put 2 tsp coconut oil in bottom and rub all around the bottom of crockpot. 
Stir together maple syrup, vanilla, and sea salt until blended.
Put in mixed nuts and toss with a spoon until fully coated. 
Spread the coated nuts in the base of the 
crockpot in a single layer. 
.
Cover and cook on LOW for approx 1½ to 2 hours gently tossing every 30 minutes.
When done, remove the nuts from the crockpot and spread onto a cookie sheet that has been lined with parchment paper and allow to cool.

Fall in LOVE with the Process!!

Each day we should wake up and find joy in all it takes to get fit and be healthy. Take the time to smell the wonderful aroma of home cooked foods, sweet fresh fruit, ingredients you handpicked and prepared with love. Think about the miracle of how our bodies can move about and function, how good it feels to stretch in the morning even if we really don't feel like it. The process will become a daily habit and bring more joy as we realize that we are feeling better and moving better therefore we have experienced a lifestyle change and THAT my friends is what our goal should be.

This is not a temporary diet where you have just one goal to make it to a certain weight and then fall back into the old unhealthy habits that got us in the unhealthy situation to begin with. To be successful we need to have our mental state to coincide with the physical state and that my friends will bring a lifestyle change which will bring lifelong benefits. I have watched many people over the years think "oh I just need to get to this weight and I will be happy" it doesn't work that way, if we are not willing to make better healthier choices each day for the rest of your life the odds of us falling are pretty good. Get addicted to making healthier choices, enjoy going for your daily walk, enjoy preparing tasty healthy unprocessed food and sharing your joy with others.
.
Surround yourself with those who want to better themselves as well. That my friends is how to succeed at being healthy and fit.  
Be excuse-less! 
Even if you wake up not feeling it......
get up anyway and move it!!
