Sesame Ginger Legs



Sesame Ginger Legs

Ingredients:
12 chicken legs
Marinade:
2 tsp minced ginger
2 tsp minced garlic
4 Tbs sesame seeds
1 tsp ground black pepper
1/2 cup soya sauce
3 Tbs dark brown sugar (or honey)
4 Tbs extra virgin olive oil

Directions:
Marinate legs in marinade overnight in fridge. Preheat oven to 425F. Remove legs from marinade and place in greased baking pan. Bake for 40-45 minutes. Add marinade to pot, bring to a gentle boil, stir constantly and lower heat if needed so it does not burn. Cook marinade for 5-10 minutes or until thickened. Pour over the cooked legs or serve as a dipping sauce. Enjoy!

Grandmas Banana Pudding



Grandmas Banana Pudding 

is

Mouth watering delicious!


8 bananas
2 boxes instant banana pudding
1 box vanilla wafers
sm tub sour cream
1 tub cool whip you will use 1/2 the tub
Mix the pudding using 1-1/2 cups milk per box
once thick add 3 heaping tablespoons sour cream and 1/2 tub cool whip, fold it in. Mix it gently by hand. Next layer cookies, bananas and mixture then repeat til gone. Keep the left over cookies in the bag and crush them up to sprinkle on top.

Cheesy Zucchini Bites

You'll need:
5 medium zucchini, cut into slices
3 Tbsp. Cream Cheese (use low fat if you want to cut back)
5 tablespoons grated Parmesan cheese
2 teaspoon dried basil
1/8 teaspoon pepper
1 pint cherry tomatoes, sliced in half

*An Optional Idea:
Replace 2 Tbsp. of Parmesan Cheese and 1 Tbsp. Cream Cheese with 3 ounces crumbled Blue Cheese (Feta Cheese could be used instead of Blue Cheese). You will still use the Parmesan Cheese for topping.

Directions:
-Cut zucchini into 3/4-inch slices. Using small spoon, scoop out the insides and discard, leaving the bottom intact.
-Place zucchini on an ungreased baking sheet.
-Combine the cream cheese, Parmesan cheese (set aside 2 Tbsp. for topping.), basil, and pepper. Top each with a tomato half (or two); sprinkle with the set-aside Parmesan cheese.
-Bake at 400°F until cheese is melted, 5-7 minutes. Serve warm.

Makes approximately 35 bites.

Veggie Ham & Egg Bake

Great Breakfast Idea!!!

Veggie Ham & Egg Bake 

You will Need:
4 Cups of Broccoli Flowerets, 
1 Cup of Small Grape Tomotoes, 
1/3 Cup of thinly sliced green onions
2 Cups of diced ham
1 Cup of Shredded Italian Cheese 
8 Eggs Well Beaten
Sea Salt dash
Pepper dash
Italian Seasoning dash
Sour Cream is optional if you want to top it with it
Pre heat your oven to 375 degrees and oil a 13x9 pan
Heat a small pan to boiling and blanch for 2 min. your broccoli, tomatoes and onion
Drain 
Dice your ham
Layer Broccoli, tomatoes, onion, ham cheese...
Then crack your eggs and beat them well adding all your seasonings
Pour eggs of mixture and stir to coat
Bake 35 to 45 min.
Enjoy ~

This is a great recipe that is a change up from traditional spaghetti!!


CHICKEN SPAGHETTI

serves 9
Ingredients:
2 cups cooked chicken
3 cups spaghetti, broken up
2 cups chicken broth, reserved from pot
2 cans cream of mushroom soup
2 cups sharp cheddar cheese grated
1 cup sharp cheddar cheese grated (reserved for later)
1/4 cup green pepper diced fine
1/2 cup diced onion fine
4 ozs. pimentos diced and drained
1 tsp seasoned salt (Lawry's)
1/5 tsp pepper flakes
pepper & salt
Instructions:
Cook cut up fryer in water, pick out the meat to make two cups.
Cook spaghetti in same chicken broth. Do not overcook. When spaghetti is cooked, combine with all of the remaining ingredients except for the additional cup sharp cheddar.
Put mixture in casserole pan and top with remaining sharp cheddar.

Bake immediately: 350 degrees for 45 minutes until bubbly.

Hint: To make sure cheese on the top does not get overcooked cover with foil for the last 15 minutes of cooking.

This recipe can be covered and frozen up to six months!
It can also be made ahead by 2 days just cover and refrigerate up to two days.

Loco Tango Martini .... This is a MUST HAVE drink!

This is a MUST HAVE drink! These were served by an awesome bartender at the Renaissance Concourse Atlanta Airport Hotel. If you are in that area, ask for Vanessa Roldan Roquemore! She gave permission to share her recipe! It was THE BOMB!
Loco Tango Martini
1 oz. Crown Royal
2 oz. Malibu Coconut Rum
1 oz Pineapple Juice 
Shake the above into a martini glass. Then layer with grenadine!
Careful! These are truly GULPABLE! SO delicious!
